Prado unveils new menu

and social dining concept 

 

This October, Omni Scottsdale Resort

& Spa at Montelucia will unveil a new

dining experience at Prado, its flagship

restaurant.

 

 

 

 

Inspired by the resort’s original vision to transport guests to the Andalusian region of southern Spain, Prado will serve  Spanish-influenced fare for an approachable American palate.

Guests can indulge in a selection of tapas, wood-fired entrées and daily paellas offered alongside dry-aged steaks, local fowl, Pacific and Northwest seafood, expertly crafted by Michael Cairns, executive chef, and newly appointed Chef de Cuisine Tom Vykulil.

“When Omni Hotels & Resorts purchased Montelucia in January 2014, we immediately embarked on a restoration of our signature restaurant to celebrate the unique flavor and heritage of the resort,” says Paul Eckert, managing director. “Guests will not only encounter a more festive and communal atmosphere in Prado, but also experience the true vision of the original resort’s architects. This is inclusive of a completely revamped menu allowing diners to partake in the flavors of Spain with dishes that are both flavorful and familiar.”

For dinner, guests can select from pinchos  (small bites), tapas (appetizers), compartido (shared plates) and entrées. Those who prefer more traditional fare can also indulge in offerings such as heirloom beet salad with goat cheese, candied walnuts and pancetta vinaigrette and center cut filet with seasonal mushroom ragu, Brussels sprouts and olive oil potato puree.

To accompany menu items, the bar offers a selection of Spanish and regional American wines, signature sangrias and classic cocktails with a modern twist . A rotating selection of tapas will complement the new dinner menu daily from 5 p.m. to 11 p.m.

 

 

To take advantage of the resort’s sweeping views of Camelback Mountain and the area’s year-round good weather, guests can dine al fresco with new communal seating in Cortijo Plaza (right) or enjoy tapas and sangria fireside. Those who prefer the comfort of Prado’s Old World dining room can watch the culinary team in action as they craft nightly specials at the wood-fired tapas display kitchen or cozy up with a glass of wine in Mbar’s lounge.
