When Mindy Chun shops for beauty products, she occasionally likes to talk to someone – but mostly she wants to be left alone.

“I don’t want to sit in the chair,” Ms. Chun says of the department store ritual, where a sales clerk offers the customer a seat at the makeup counter for a demonstration and sales pitch.
